Fried Zucchini



This is one of the easiest ways to use up a bunch or your zucchini and get your family to eat more veg.

Ingredients:
3 zucchini sliced in thin rounds (not too thin or they will burn)
2 eggs beaten
1 cup of unbleached flour
1 cup of panko bread crumbs
1 cup of shredded Parmesan cheese
1 tbsp. of onion powder
1/4 cup of Olive Oil
Flaky Sea Salt
Wedges of lemon for serving


Directions

Set aside 3 shallow dishes in an assembly line. In the first dish put the flour, second dish the well beaten eggs and third the panko, parm and onion powder (make sure to mix it well). Dip the zucchini chips in the the flour, then eggs and lastly coat each side in the panko mixture. Set aside and continue until all zucchini are breaded. In a large skillet, heat olive oil. When oil is hot, lay zucchini in a single layer. Fry for 2 minutes on each side or until golden brown. Transfer to a dish lined with a brown bag and sprinkle with finishing salt. Continue this process until all zucchini are fried. Sprinkle with more Parmesan and serve hot with wedges of lemon.
