1. The easiest option is to just let it be. The seeds will dry, drop into the soil and new cilantro plants will soon sprout up. Isn't nature amazing?
2. Pick the seed heads off of the plants. Lay seed clusters flat on a baking sheet and pop in a oven preheated to 150F for 3-4 hours. When the seeds are fully roasted and brown, put them in a sieve and remove any remaining stems. You can store the seeds whole or use a spice grinder to process them. Store them in a spice jar and use it to flavor roasted veggies, chicken, potatoes...
