Chimichurri


Ingredients:

  • 4Tbs olive oil

  • 2Tbs red wine vinegar

  • 3 Tbsp. finely chopped chives

  • 3 Tbsp. finely chopped cilantro

  • 1/2 Tsp course salt

  • 1/8 Tsp red pepper flakes (can be adjusted or left out)

Instructions:
Place chives, cilantro, salt, red pepper flakes and vinegar in a food processor. Slowly drizzle in olive oil, with the processor on low. Add a spoonful to soups, marinades or salad dressings, We love adding it to chicken tortilla soup! Can be stored for 1-3 days in the refrigerator.
