Lemon & Herb Roasted Chicken

Lemon and Herb Marinated Chicken

Ingredients:

  • Spatch-cocked Chicken  (chicken with backbone removed)

  • 1/4c of Olive Oil

  • Zest and Juice of 1 lemon

  • 2 Tbs Black Pepper

  • 2-3 Tsp Red Pepper Flakes

  • 2 Tsp Agave Syrup

  • 1 Garlic Clove Chopped

  • 5 Sage leaves chopped

  • 2 Sprigs of Thyme de-stemmed

  • 1 Sprig of Oregano de-stemmed

  • 3-5 Sprigs of Parsley Chopped

  • 1 Sprig of Mint Chopped

  • 5 Basil Leaves chopped

  • 2 Tbs Kosher Salt

Directions

  • In a large bowl or baking dish mix all ingredients except salt

  • Rub the chicken with the marinade on both sides and let sit for 30 minutes

  • Preheat oven to 500

  • Line a baking sheet with tinfoil

  • Remove chicken from marinade and salt both sides

  • Place chicken flat, skin side up on baking sheet

  • Pour remaining marinade over the chicken

  • Cook for 10 minutes at 500

  • Lower oven temp to 425 and cook for another 30 min or until skin is crispy and juices run clear

  • Serve with pan drippings on the side

We serve this with a simple garden salad and roasted baby potatoes.  
This will work with any herbs you have on hand and also is great for grilling.
