Paloma thyme
/Ingredients
- 10 sprigs of fresh thyme 
- 1 cup of sugar 
- 1 cup of water 
- 1 oz of tequila blanco 
- 1/2 cup of pink grapefruit juice 
- seltzer water 
- crushed ice 
- slice of pink grapefruit to garnish 
Directions:
- Simple syrup: In a small pot bring water, sugar and thyme stems to a simmer. Allow to simmer until the sugar is dissolved. Cool completely. Strain thyme and store syrup in a mason jar for up to two weeks in the refrigerator. 
- Cocktail- In a shaker or mason jar with a lid add 1 tbs of simple syrup, tequila and grapefruit juice. Shake well. Pour over ice. Top the drink with seltzer. Garnish with a sprig of thyme and wedge of grapefruit.
